Sugar Cube Donuts, a local bakery company specializing in richly filled, square-shaped vegan pastries, is the latest company to join the outdoor vendors at Milwaukee Public Market (400 N. Water St.). And it’s a great weekend to discover them. The company, a sister to the herbal restaurant On The Bus located inside the Public Market, launched its outdoor pop-up on July 8. Its hours are Thursday to Sunday, 8 a.m. to 1 p.m.

“Sugar Cube Donuts… is a concept we originally developed to be a weekly special at On The Bus. We spent months in the test kitchen finalizing the recipe when we realized that Sugar Cube Donuts deserved to be a brand in its own right, ”says Paige Hammond, Director of Marketing and Growth at Playing in the Plants Restaurant Collective, which operates Sugar Cube.

The hallmark of the company is its unusual and rotating flavor options. For July, the menu includes maple, vanilla nuggets, cotton candy, banana cream pie, and cinnamon roll, among other flavors.

Where to find it: Sugar Cube shares space with Sneaky Pete’s and Draft Patio on the St. Paul Avenue sidewalk patio of the Market.
